How to make Buns with raisins [2020]

How to make Buns with raisins [2020]

I saw such scones in many cookbooks. As if that wasn't enough, I ate such sweet butter buns with raisins in high school with the difference that those were a bit bigger.

Reasons why it is so I baked two and maybe even more ... :)

Well, are delicious, freshly best with butter and jam and perhaps even without jams for what overwhelm their flavour when they are great?

And here I divulge the secret: the recipe for these rolls is nothing but a recipe for a French butter brioche bun.

So, as always, I encourage you to try it! :)

How to make Buns with raisins [2020]

Let's dive right in.

Ingredients for 12 rolls:

- 375 g wheat flour type 450

- 100 ml of milk

- 7 g dry yeast or 15 g fresh

- 4 eggs

- 50 g of fine sugar for baking + a spoon more

- 2 teaspoons of salt

- 175 g butter at room temperature

- 40 g raisins/currants

- yolk

Execution:

1. In the evening, combine yeast with lukewarm milk and 2 tablespoons of sugar and 100 g of flour. We leave under cover until the yeast foam for about 10-15 minutes (at room temperature).

2. Then combine the yeast leaven with the rest of the flour, 3 eggs, sugar, salt and knead for 5 minutes with a mixer or 8 minutes by hand. We should get a smooth sticky dough.

3. After that, add soft butter to the dough and knead with a mixer for 5 minutes or by hand about 10 minutes until all the butter blends perfectly with the dough. We put the dough in a lightly oiled bowl and cover with cling film. Put in the fridge for the whole night.

4. The next morning, we remove the cake from the fridge and combine it with raisins. After which we divide into two parts. Then these in two and so on until we get about 12 parts, from which we form buns. We spread them evenly at intervals of about 5 cm from each other on a mould lined with baking paper. And put undercover to rise until they increase in volume about twice.

5. We preheat the oven to 220 degrees Celsius. We combine the egg vigorously with yolks and a spoonful of sugar and grease the buns. Bake for about 15-20 minutes until they turn brown. We cook on the grill. Can be served with jam.

Enjoy! :)

* I gave up dried apricots.

Triple chocolate muffins with raspberries

I haven't baked Triple chocolate muffins with raspberries for a long time. That's why I spontaneously started preparing them last night. The girls ate Triple chocolate muffins with raspberries today for their second breakfast. They tasted of milk, even very much. My daughters love Triple chocolate muffins with raspberries and eat them especially when I bake them with fruit. Fruit and chocolate, on the other hand, do not have to convince me or the children for a long time. And as it is with muffins: they are hassle-free, the best slightly cooled (these have a slightly crunchy crust).              Ingredients for 12 pieces of standard size:   100 g of good chocolate (70% cocoa, e.g. Lindt) 300 g of flaked flour or wheat flour and baking powder (approx. 1 teaspoon ) 1 teaspoon baking powder 100 g dark muscovado sugar 250 ml of milk 50 g of liquid-cooled butter 2 well-diced eggs 100 g of chocolate chips...

Slightly almond cake with blueberries, raspberries and apricots / Almond flour summer fruit cake

Thank you very much for the recipe. It is an idea to use excessive amounts of proteins and also summer fruit. Delicate almond and very fruity baking, ideal for afternoon coffee.     Recipe for a delicate almond cake with summer fruit:   110 g of wheat flour less then 2 teaspoons of baking powder 240 g of powdered sugar 110 g of ground almonds 40 g of breadcrumbs 250 g of butter 6-7 proteins a small pinch of salt about 350 g of fruit: preferably blueberries, raspberries, diced apricots, light fruit that will not blend into the dough     We preheat the oven to 180 degrees Celsius. Baking form (it can be around a form with a diameter of 24 cm or 20 cm x 15 cm) is lined with baking paper, if it is a cake tin lined the bottom with paper, the sides are gently oiled and poured with bread crumbs not very generously.   Then melt the butter in a small saucepan. Set aside to light cool. Sift flour with baking powder over a lar...
