HOW TO MAKE BLACK BREAD ON YEAST

Black bread with caraway seeds with an intense, specific taste and smell. To those who know the taste of such bread, I would like to say that they are made very quickly.

And what is important, this bread is made on barley wine. But if you can't get it, dark beer is the perfect substitute. Alcohol is minimally noticeable remains in the background, and yet emphasizes the the uniqueness of this type of bread.

Ingredients:

 

- 200 g rye flour

- 150 g flour type 450

- 150 g wholemeal flour

- 2 tablespoons of powdered milk

- 1 tablespoon of cocoa

- 1 teaspoon of instant coffee (in granules)

- 1 teaspoon salt

- 1 teaspoon cumin

- 1 and 3/4 teaspoons instant yeast or 15 g fresh

- 2 tablespoons of oil

- 3 tablespoons of molasses

- 275 ml of barley beer or dark beer

 

Execution:

 

1. If we use fresh yeast we prepare a solution. Crumble the yeast into 50 ml of warm water and cover it with a few spoons of flour to obtain a yoghurt consistency. Let stand covered for 10 - 15 minutes to foam. Then combine with the flour and the rest of the ingredients as described below.

 

AND / OR (For instant yeast)

 

Combine instant yeast, flour, powdered milk, cocoa, salt and cumin in a large bowl. We add oil and molasses. Gently heat the beer in a saucepan and gradually combine with other ingredients to create a smooth dough.

 

2. Knead on a lightly flaked flour board for 10 minutes until the dough becomes flexible. We put them in a bowl, cover them with oiled food foil. And set aside in a warm place to increase the volume about twice for 1 an hour and a quarter.

 

3. Put the dough on the board and knead. We form a ball about 15 cm in diameter and place it in the form previously lined with baking paper. We make a cross-shaped incision and then cover the bread with oiled foil for 20-25 minutes to increase the volume.

 

4. Bake in a preheated oven to 200 degrees Celsius for about 30 minutes until the bread after knocking is empty inside. If it turns brown on the top during baking, cover it with aluminium foil.

We cool on the grid.
