Bread on soda(SODGE BREAD), traditionally baked with a cross-shaped cut. Its roots can be found in America, exactly in the last decades of the eighteenth century. And although it comes from overseas, today it is associated by many with Ireland and popularly called Irish soda bread.
It is wondering where the tradition of cutting bread in such a specific way comes from.
It was once believed that the cross on bread scared away evil spirits and temptations.
However, today it is believed that such a cut facilitates bread rising at high temperatures as well as cutting it into equal-sized pieces.
The bread itself is incredibly easy and quick to make. It does not need time to grow, because buttermilk reacting with baking soda is responsible for the growing process itself.
Interesting taste, very good to me. And the best the combination you can imagine here is bread with butter and smoked salmon.
It will not take you more than 15 minutes to prepare the dough itself. So maybe so fresh bread on soda in April evening? :) I
took the recipe from the book '' Baking with Passion '' by D.Lepard and R.Whittington.
Let's dive right in.
Ingredients:
- 300 ml buttermilk / low-fat natural yoghurt
- 1 tablespoon of molasses
- 220 g of loose flour (can be replaced with wheat flour + a pinch of baking powder)
- 220 g wholemeal wheat flour
- 1 teaspoon of sea salt (original Maldon salt)
- 1 tablespoon of wheat germ
- 1/2 teaspoon of wine stone
- a tablespoon of soda.
Execution:
1. Heat the oven to 190 degrees Celsius and the form (it can be round with a diameter of 23 cm or rectangular with dimensions of 25x28 cm) lined with baking paper.
2. Pour buttermilk and molasses into a saucepan and heat on low heat until the two ingredients combine perfectly.
3. Other ingredients, i.e. flour, soda, wine, sprouts, combine and salt. On this, we pour buttermilk with molasses.
We knead the dough, which should be smooth and soft.
We form them into spheres and make deep cuts in the shape of a cross.
4. Bake at the above temperature for about 40-60 minutes until the bread seems to be empty after tapping.
We cook on the grill.
